The oranges are then inspected and prepared by hand. The orange pulp is scooped out, the pips are sieved and the thick peel is cut.\u003c\/p\u003e\n\u003cp class=\"\"\u003eThe oranges are then cooked with sugar in small batches using traditional, copper-bottomed pans. After cooking for a second time, the marmalade is left in a pail to cool overnight.
